
It’s the season for outdoor dining, fresh ingredients and slowing down and this tomato corn peach salad is one you’ll want to make over and over again, plus it’s so simple! Every summer, I think, “maybe I should be a food blogger” because it’s easily my favorite season to cook for. Everything is bright and fresh and we can whip up the most delicious dishes from simple ingredients.
This week, we’d picked up a gorgeous yellow and red-tinted heirloom tomato and while a traditional caprese would have been incredible, I opted to switch it up. Plus, I had a peach and ear of corn on hand, so this is what I came up with.


It’s full of amazing flavors and textures and would be the perfect side dish for a party or for a simple dinner. We paired ours with grilled flank steak and I’m telling you, the whole thing was perfection! The grilled peaches were a mix of smoky and sweet, the corn added great flavor and texture and the big handful of fresh chopped basil finished the whole thing off perfectly.
I used feta here, but fresh mozzarella would have been delicious too! This is one of those recipes that’s not exact, just wing it on what feels right to you or tweak to your exact taste.

Tomato Salad with Grilled Peaches and Corn
Ingredients
- 1 ear of corn, husked and grilled
- 1 peach, cut into 8 slices and grilled (I drizzled with a little olive oil so they didn’t stick)
- 1 large heirloom tomato, more as needed
- big handful of fresh chopped basil
- 1/4 cup crumbled feta
- salt and pepper to taste
- drizzle of olive oil and high-quality balsamic vinegar (the one I used is a bit on the thicker side, but not quite a glaze)
Directions
Start by grilling your corn and peaches until they have char marks, but the peach is still firm. Set aside to cool to room temperature and remove the corn kernels from the cob.
Slice your heirloom tomato into 1/4″ inch thick slices and arrange on a plate. Top with the peach slices, corn, feta, lots of basil and season with salt and pepper. Finally, drizzle olive oil and balsamic vinegar on and serve!
