Summer is in full swing, and what better way to enjoy the season’s best fresh produce than with a delicious peach and tomato salad? This one is a current favorite around here and has so many amazing flavors—juicy, sweet peaches, ripe tomatoes, creamy burrata and fresh herbs to bring it all together!

This salad is the perfect combination of sweet and savory flavors and makes for a great side dish or a light main course when paired with a protein. Just the other night, we had this salad alongside a roasted chicken and it was pretty fabulous

So, whether you’re looking for some more light and healthy lunch options or a flavorful side dish to bring to your next BBQ, this salad is sure to be a hit. Honestly, the grilled peaches just take it to the next level!

Speaking of summer, I can’t believe we’re half way through with it. Our camps are coming to an end and we’re finding a new groove with having the kids home a lot more, and while yes, it can be tiring and a bit hectic, I’m leaning into the crazy and enjoying our unstructured days, more pool time and long, lazy mornings.

This past weekend, we had some friends for dinner that we hadn’t seen in a while. Why is it that when you have kids, you can easily go 3+ months without seeing people you love and almost not even realize it?

Anyway, the kids played, we made pizza and this amazing peach and tomato salad, and caught up on life. It was so good for the soul and reminded me to really enjoy these moments. To be grateful for such amazing friends, good weather and a chance to meet up and just relax.

Okay, so back to this recipe, it’s delicious, trust me, and make it asap! Especially if you have a garden full of fresh tomatoes and fresh peaches on hand!

Grilled Peach Tomato Salad with Burrata

  • 2-3 Heirloom tomatoes, sliced 1/4″ thick
  • 1-2 peaches, sliced into 1″ wedges, grilled (we just put them straight on the grill til lightly browned and softened)
  • fresh basil
  • burrata
  • balsamic vinegar, recommend a thicker one
  • olive oil
  • salt and pepper

Arrange sliced tomatoes and sliced peaches on a plate, drizzle with olive oil and salt and pepper. Top with fresh basil and burrata and finish with another drizzle of olive oil, some thick balsamic vinegar and more salt and pepper. If you want, toss some croutons on for a little crunch!

There you have it! So simple, so easy and so delicious. The peaches add such a wonderful sweetness and depth to this summery salad. This would be such an impressive one to bring the next time you go to a friends’ house for dinner and takes only a few minutes to pull together.

Variations of Peach Tomato Salad

While this version is absolutely delicious, I wanted to share a few other ideas and ways I’ve made it that are also amazing.

Tomatoes: While I love a good heirloom, they’re not always easy to find. Swap for fresh cherry tomatoes or grape tomatoes, or even larger slicing varieties.

Herbs: I’ve made this salad with a mix of basil and mint and wow, this combination of herbs is amazing! The mint adds such an additional flavor that’s so unique and one I love. It’s so refreshing!

Cheese: If you can find burrata or don’t love mozzarella, swap the cheese for fresh feta cheese or goat cheese.

Dressing: I love balsamic, but this salad is also great with a few tablespoons olive oil and a squeeze of fresh lemon juice, plus some lemon zest. This has a more subtle flavor than balsamic, but is so delicious! You could also use red wine vinegar instead of balsamic.

Add Lettuce: If you want to make this more of a salad, add some baby arugula layered underneath for a nice, peppery addition.

Add Croutons: I once had some leftover, dried out sourdough bread, so I toasted them up, added some garlic powder, salt and pepper and tossed those on top. They help absorb the natural juices from the tomatoes and peaches, plus the dressing and add a really great crunch. Not pictured here, but highly recommend!

No matter how end up making it, this summer peach tomato salad is a crowd-pleaser and a great way to se all those beautiful tomatoes!
